Potatoes, despite their relatively long shelf life compared to many other vegetables, are still prone to spoilage. Proper storage, especially for small new potatoes, is crucial to maintaining their freshness and flavor. Food experts have shared numerous strategies to keep potatoes in peak condition, and focusing on a cool, dry storage environment is a key recommendation.
According to a Food52 expert, “The key is to store potatoes in a cool, dry place, such as a cabinet in a pantry, in a paper bag or cardboard box.” It’s important to keep potatoes at a cool temperature, ideally around 10°C, with 90 to 95 percent humidity, although achieving this exact environment may require some estimation. These conditions help prevent potatoes from turning green, developing soft spots, or sprouting prematurely. Once these signs appear, it indicates that the potatoes are past their prime.
Avoid storing potatoes on bare countertops or in direct sunlight, as these conditions can accelerate spoilage. Instead, opt for dark, cool spots such as drawers, baskets, closets, paper bags, or bamboo steamers. These storage methods can extend the potatoes’ shelf life to one to two weeks.
It’s also essential to remove new potatoes from their plastic packaging, which is not ideal for long-term storage. Potatoes are photosensitive; exposure to sunlight can trigger photosynthesis, causing them to turn green and eventually wrinkle and rot. Extreme temperatures, whether too cold or too warm, can also negatively affect potatoes.

While the Committee on the Toxicity of Chemicals in Food, Consumer Products and the Environment (COT) has deemed it safe to refrigerate potatoes, culinary expert Harold McGee, author of “On Food and Cooking,” advises against it. He explains that refrigeration alters the potatoes’ metabolism, causing starch to break down into sugars. This change can make refrigerated potatoes sweeter and result in an unappetizing brown color when cooked.
